Hydrogenation is a chemical process used to convert liquid vegetable oils into semi-solid or solid fats by reducing the level of unsaturation. This improves the oil’s stability, shelf life, and melting characteristics, making it suitable for various food and industrial applications.
In the hydrogenation process, refined oil is treated with hydrogen gas in the presence of a catalyst under controlled temperature and pressure conditions. This reaction reduces double bonds in fatty acids, resulting in a more stable and solid fat.
After hydrogenation, the catalyst is removed through filtration and reused. The product may undergo further processing, such as deodorization.
